Preferably one that you mix directly into the pan and not have to use a bowl/mixer. The healthier the better

I use half the amount of sugar in the recipe.

I make almost exactly the same, but I use 1/2 c honey instead of the sugar, only 1/4c brown sugar, and 1/2 c unsweetened applesauce instead of the eggs. Comes out great and the the kids love it!
