Honestly unless your standards for sushi are very low, they will all degrade in quality significantly. Sometimes I will bring home a few rolls if I have sushi for lunch and they are almost inedible at dinner time.
The seaweed for the roll will be tough instead of crisp; the rice will have become hard and the filling not so good.
Why not serve something that actually is good if not served immediately.

No pre-made sushi will really last. Even if you get kani ones or with cooked fish. Rice will be dry. There’s no way to prevent it. Raw fish is a health gamble.
If we ever have sushi for Shabbos, we make it ourselves before lunch. But you have to store your rice properly so it’s not dried out. And if we want raw fish, we store it in the coldest place in a fridge on ice.

No matter what's inside, the exterior rice will get hard once it's been in the fridge overnight. We usually get sushi for Friday night and it tastes awesome. Leftovers shabbat day--not so much.

None of it stays good, the rice gets hard.
