Oven fried chicken (drumsticks and/or thighs)

Anyone do this successfully? If so, please give detailed instructions. I've only made cutlets in the frying pan a few times (they are expensive where I live.) I'm looking for chicken that tastes good cold.

I've fried cutlets in the oven came out delicious. Preheat to 400. Put thin layer of oil in pan. Put cutlets (I coat with mayonnaise and corn flake crumbs) on pan. Bake for about 20 minutes. You will hear the oil sizzling. Turn over cutlets. Bake for another 15 min. They should look crispy.

Does the oven get very dirty from doing this?

Schmear any type of chicken with mayo and spices. Coat w cornflake crumbs. If cutlets you may want to roll both sides in crumbs.

Optional, spray top w Pam but you shouldn't need it. Bake, probably 450, shorted for cutlets & longer for larger pieces.

I haven't found it to splatter and gets nice & crisp and very tasty.

Personally I have found that anything that has oil and is left uncovered usually spots the oven.

That has been my experience as well. As long as the chicken tastes good cold, I don't care if it doesnt have a crispy exterior. So I'm wondering if covering the chicken when baking it will work out.
