Cookie, I decided to save you some work while you make your fish patties! LOL

2 tsp. salt
1 tsp. paprika
3/4 tsp. cayenne pepper
1/2 tsp. onion powder
1/2 tsp. thyme
1/2 tsp. white pepper
1/4 tsp. garlic powder
1/4 tsp. black pepper
1 whole roasting chicken (3 lb.)
1 cup chopped onion

Preheat oven to 250 degrees. Combine all spices in a small bowl. Rinse chicken inside and out. Drain well. Rub spice mixture over skin and inside of chicken. Place in a resealable plastic bag. Seal and refrigerate overnight.

When ready to roast, stuff the cavity with onions. Place the chicken breast side down in a roasting pan. Roast uncovered for about 5 hours or unitl pan juices start to caramelize on the bottom of the pan and chicken is golden brown. Baste occasionally with pan juices.

It may be a good idea NOT to preheat your oven the night before you do the roasting Rolling Laughter
