I hate cooking on YT, not to mention that the evening meals are impossible to cook for, setting the table after candle lighting is hard enough.

I really don’t like previously frozen cooked food. Is it to early to cook my Monday night food on Friday afternoon if I am not freezing it? I have limited oven space on Sunday and a ton of food to make.

I do eat Shabbos leftovers until Tuesday, honest even Wednesday night, but I am having company and I need some reassurance.

sounds fine to me! I'd only be nervous about salmon fish. Otherwise, regular sides, meat etc sitting in fridge for 3 days is not a problem.

For the salmon, do a marinated cooked salmon and that should last for a while
