I was about to toss but then Google said because it’s cured it’s ok if it’s not refrigerated.
What do you all think?

Not sure if you are referring to salami that comes in a sleeve. If so, we dry it for weeks/months out of the fridge and don't have a problem with it. Also if I am ever unsure about something being left out for too long I make sure to heat it up to kill any extra germs before eating it. So maybe make hassle back salami or something like that.

Hard salami or the sliced packaged deli meat salami? The former is ok the latter not

Hard. Not sliced. But that package says keep refrigerated.

Is it different than those hard salamis you see hanging in a butcher shop or at a deli counter?
Those definitely aren’t refrigerated; they harden as they hang there drying. What makes them dry instead of going bad? I don’t know.
