What can I do to get as modern a look as possible with a new Custom White Shaker cabinet kitchen?
Im going with wood rather than acrylic, because I like the option of being able to refinish.
Im asking about cabinets themselves, not lighting, etc.

Shaker style cabinets are a fairly traditional style and they aren't going to look "modern" if that is the look you want.
You can style them by using contemporary accents - as imamother Broom posted, knobs and pulls would make a huge difference including the style and the finish. Your counter material, backsplash and accent lighting and any other accessories could be contemporary versus traditional.
If you truly want modern versus contemporary then choose a different door style as slab doors are a modern style in white or even in wood like walnut which is a growing trend in high end kitchens.

A very thin rail and stile (the picture frame part of the door that surrounds the center panel) would be a more modern look.
