one hour to prep or one hour to cook? I can do a lot of prep in an hour but thats not cook time.

Buy challah
Tomato dip in blender
Olive dip in blender
Or buy dips
Gefilte- dump sugar and a little water in pan. Cover put in oven
Skip soup or cheat: boxed broth, few chicken. Pieces and baby carrots and cut up a squash
Chicken in oven with spices and oil, covered for a few hours or duck sauce
Buy kugel or make Farfel in the oven
Roast any veggies on a baking sheet with spices before shabbos if u want
In a 9x13- bag frozen green beans, salt, garlic cubes and drizzle oil-bake uncovered
Dessert-buy grapes and make the frozen cookies or buy cake
Shabbos day:
Serve g fish and dips again
Make a lettuce salad shabbos morning
Buy cold cuts
Put up Chulent
Dessert-buy sorbet
Done.

I usually make a side of salmon- cooks faster then gefilte and when I am tired its easier to prep
Then Chicken in a pan, baked rice, and I roast a lot of veggies. If I am tired I do easy veggies like cauliflower, broccoli, brussels, green beans. Things that can be dumped on a sheet pan spiced and roasted.
If you have your oven on you can make garlic confit its delicious

This depends where you live and budget. Some kosher stores sell ready cut chicken-soup vegetables which you can dump with chicken cutlets, salt, pepper and garlic.

Also buy veggies that you can make into salad on shabbos, just before the meal.
