They are breaded from a takeout place, from our super bowl party last night. Since they were in a sterno they got a bit dried out. Would a sauce help or is it a lost cause?

what about a hot sauce?
like brown sugar, honey and herr's hot sauce?
I would pour over and rewarm covered...
it'll probably be fine..

Me too. Mayo based might soften the chicken more.
Dipping sauces are good too. That’s what we sometimes have for Shabbos day shnitzel.

Heat them up covered with a little bit of water on the bottom. Should make them moist again but it will definitely lose the crunch
