My friend had some ladies over for lunch and served a Salmon Trifle as a light start to lunch.
It was so pretty and easy.
She took martini glasses - put some guacamole in the bottom - added a layer of poached cubed/flaked salmon and then put pico de Gallo (which is a type of salsa) over it.
So lovely light, pretty and refreshing.
I am assuming people have recipes for guacamole, poached salmon and pico de Gallo.
