For instance, two different kinds of seasoned olives
Or two kinds of cookies (eg regular chocolate chip and cocoa with white chocolate chips)

Yes! I remember my halacha teacher in high school teaching this, and a girl gave him one black jelly bean and one white jelly bean. He loved it!

I asked if 2 flavor cookies is 2 things. I was told that it is. I do homemade cookies in different flavors every year.

Doesn't it have to be two things with different brachot? Like, one mezonot and one shehakol or ha-adama?
That's how we always do it, but I don't know if that's minhag, halacha or just a family thing.

It's a standard misunderstanding and many of us were taught this way.
Look inside the seforim and you'll see that there is no basis for that.

I don’t think that CC cookies and chocolate cookies with white chips necessarily have different flavors. They are distinct but I am not sure if that would be OK. You can definitely ask your LOR.
Chocolate chip and raspberry thumbprint (or peanut butter) would definitely work.

You can even take a roast, cut it in half and that is kosher MM.

Two pieces of the same roast would not be considered two minim. (There is an opinion that two manos, two portions, is sufficient, even if they are the same min, but if you are trying to satisfy the "classical" psak that two different types of foods are required, two halves of the same roast would not qualify.)
However, two different types of meat would work (e.g. dark and light chicken, a steak and a tongue, etc.).

Nope. You can give a red apple and a green apple and be yotzei.

I learned that it should be 2 different Brachot, so it's interesting hearing other drachim.

There definitely is an opinion that says 1 piece of meat cut in half works.
"The basic requirement is to send two portions, but what exactly constitutes “two portions”? The Shulchan Aruch states “two portions of meat.” Based on this, some understand that even one large piece of meat that can be divided into two reasonable portions would suffice, and indeed Eshel Avraham (Buchacher, last comment in OC) entertains this possibility."
