I imagine so
It's probably easiest to line it with a baking sheet made for a Betty that has sides,
you cook it like rice

Fyi, we have gluten free wraps (the frum brand is called "Past nisht", which makes us so happy) and use them to make wrap pizzas and quesadillas in the Betty Crocker. You can also make a fritata.
