I make different salads. Easy ones are:

cucumber salad with red onion, dill, celery, radishes and scallions

Israeli salad

Lettuce, different color peppers, craisins, almonds and sweet potato chips

Plain old cole slaw

Tomato with fresh basil and red onions

I also recycle the potatoes, celery, radishes and parsley from the karpas and make them into potato salad by adding some pickles and dressing with oil and lemon juice.

Beet salad
Cucumber salad
Mock cole slaw (made with kohlrabi)
Carrot salad

This I make every day fresh
Lettuce, tomato (peeled), avocado salad (sometimes add in radish or purple onion)

Cucumber salad and carrot salad. We eat nearly no ingredients so we go through over 200 cucumbers on pesach

Were sefardi. So I make all my regular salatim and salads.
Tachina, chumus, pickles, beets, carrots, matbucha, eggplant, fried eggplant, pickled eggplant, cole slaw, avocado salad, corn salad, israeli salad...

Romaine lettuce with peppers, tomatoes, kirbies and an old standby called pink dressing. With every single meal. No one will entertain anything else.

We also make avocado spread with boiled eggs, and an old Susie Fishbein potato salad from the original KBD.

Then for variation
Broccoli salad
Asian cabbage salad
Greek salad (heard of palm instead of cheese)
Didi salad (mandarin orange, purple onion, greens, sweet roasted slivered almonds

I can also do an eggplant zucchini peppers cooked dish (everything peeled). I have one version made with schmaltz that I can serve with fleishigs and one in homemade tomato sauce that I can serve with the fish course.
