1 stick marg
1 cup sugar
2 eggs
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup sour cream or parve sour cream
1 tsp vanilla extract
1 can whole cranberry sauce
In a large bowl, mix marg and sugar until creamy. Add eggs.
combine dry ingd.
mix sour cream and vanilla.
Add alternately to marg/sugar mixture. Beat until smooth.
In a greased 9 x 13" pan, pour half of batter.spread half of cranberry sauce over batter. Spread remaining batter over cranberry sauce, Then top with remaining cranberry sauce.
Bake at 350 for 50-60 minutes.
for a glaze, mix 1 cup confectioners sugar with 1 T nondairy creamer. mix until smooth. If too liquidy add a bit more sugar until a good consistency.
Drizzle over cooled cake.
Since some ppl (who will remain nameless) think this sounds disgusting, I want to say for the record this is a great cake and many people do like it!
