Easy vegetable side dish for sheva brachos?

Looking for an easy vegetable side dish for a sheva brachos that is not green beans or broccoli/Cauliflower. Thanks!

Roasted veggies dinner done had a bunch of recipes or super simple any veggies cut a bit slanty olive oil, pepper and salt.

Zucchini, yellow squash, cherry tomatoes whole they get a little charred, eggplant lots of red onions sliced

I saw your title and was about to suggest a really easy & delicious green beans recipe since I made it recently for sheva brachos and it went down really well.

But, I then I opened the thread and saw that you don't want green beans...

This sauce is good for just under a lb of green beans, so increase according to how much you're making:

4 cloves garlic crushed
2 tbsps honey
2 tbsps soy sauce
1 tbsp lemon juice
3 tbsps oil
salt & pepper
3 tbsps sesame seeds

boil for one minute. pour over beans. Add in bit water.

Bake in oven for one hour (I found that it needed longer when doing a large amount, and I also gave it a good mix half way through.)

Would you do greenbeans n breadcrumbs? Even though it's greenbeans? It takes 5 min to put together and is delicious. It's very typical but it's so good.

I Sautee breadcrumbs in oil untill browned. I buy the French cut greenbeans and mix with the breadcrumbs. I then taste it. Certain companies add more salt then others. If I feel it's stoo bland I add salt. Ze hoo!

Would you do baby peppers?
Dont have an exact recipe, its baby peppers soy sauce garlic oil salt and pepper bake till it looks ready

You can do a veggie board of roasted veggies

Butternut squash
Whole button mushrooms (canned is ok if roasted long enough
Red onion cut in wedges
Mini peppers
Japanese Eggplant
Zucchini
Yellow squash
Carrots ( I buy sticks cut at the grocery

The only veg that requires a little more work is the butternut squash

If you want you can also do roasted stringbeans and roasted broccoli and cauliflower

Roast in separate cookie sheet with a spray of oil and salt

Let the flavour of each veg shine

Put it on a board makes a beautiful presentation


Another great recipe is spaghetti squash kugel

You can do a stack.

Bake slices of eggplant, zucchini, yellow squash, red pepper and button mushrooms with oil and spices. Stack and secure with a wooden knot skewer.

Slice green and yellow squash. toss in oil, salt and pepper. Spread on a cookie sheet adn bake till soft. Serve either on a stack alternating colors or on a slant taking up more of the plate.
