I use dish soap and sponge. Steel wool if there are burnt on bits. If I wipe down when something spills, I can do it about once a month and it's easy enough.
I'll most likely use bleach for Pesach.

Side question - do people clean the stove every day after dinner? When I was working I cleaned it once a week, now I'm on maternity leave I clean more often.

Yes, I wipe the stove down (I use method wipes) every night after cooking.

I remove the grates and clean the actual stove top every day. The grates get cleaned once a week with dish soap.

I switched over to induction ranges two years ago. Ah! I’ll never scrub grates again!
