Yes, if it gets damp. Needn't be soaking wet, just stored in a humid location. ANY organic material can get moldy given the right conditions. Fungi aren't picky--all they need to thrive is organic material--they don't care what flavor--oxygen, a little bit of humidity, and a comfy temperature range above about 40 degrees F. Mold grows best at 55-85 degrees F. but some species can grow even at temperatures above 90 degrees F.

Store in a cool dry environment
The minute they get a bit damp yes they cal get moldy

We once had matzah that looked fine but tasted like the hold of a ship. I assumed it had been stored in a moldy warehouse and the smell, not the mold itself, penetrated the packaging. But now I'm thinking that maybe the matzah itself was moldy and we just couldn't see the mold. matzah is, after all, speckled, and even mildewed laundry doesn't always look stained, it just reeks. the taste of the matzah was awful but nobody got sick from it, B"H.

Even if not moldy it can get wormy (webbing hanging) if left very long.

It can taste stale. Not crispy and crunchy.

Yes. We once got a box of moldy matzah. We used to love that bakery but afterwards we never got from there again. It didn't look moldy but had a moldy taste. We assumed it was stored in a wet place.

Someone I know tried the matzah from bingo this year and said it was stale. Not sure how anyone would be able to use it on Pesach which is in two weeks if its already bad.
