2 cups of soaked quinoa - I soaked it overnight but cant cook it today.

I wanted to cook it and freeze but wont manage today.

any ideas what to do with it?

can I soak it further in fresh water and leave in fridge till after shabbos?

Freezing raw quinoa
Yes it is possible to freeze raw dry or soaked quinoa. The major problem why we freeze raw quinoa is that quinoa gets contaminated with bugs and insects when it is kept outside for too long.
If your quinoa is getting spoiled outside then you need to put it in the freezer.
If you give dry quinoa you can put it in an airtight box and keep it in the freezer this way will not go bad easily and it will be safe for the next 6–7 months.
If you have soaked quinoa and you do not have time to cook it then you can freeze it. For this, you need to remove the water from it first, and then you can freeze it in the air-tight boxes. It will be easy for you if you are storing it in portion sizes.
You can also freeze it in the zip lock bags. Put it in the bags and make sure to remove all the air from the bag so that it may not get spoiled.
When you are ready to eat it just put it in the microwave for a few minutes and it will be good to eat.

Cover and stick it in the oven for 30 minutes. Then it's ready and you can freeze it.
