"keep warm" in crock pot

Assuming my yapchik is fully cooked before Yom tov, can I put it on Friday from fridge to crock pot on keep warm setting and it'll warm it up? For shabbos day?

(I have done keep warm before... But usually food is still hot when I switch over)

I usually feel more comfortable with Low rather than Keep Warm from a food safety standpoint, especially if you're starting from not hot.

I doubt that cold food will warm up on the keep warm setting.

I'm sure I would've wondered right before yt... I'm just thinking, maybe I need high? It takes hours to boil.
