Has anyone ever made naomi Nachmans pumpkin challah from perfect flavors cookbook? It calls for pumpkin puree and specifically says not to use pumpkin pie filling. What is pumpkin puree? Cant find any can that says pumpkin puree

I haven't tried it yet though I keep thinking sometime I will....
Just plain canned pumpkin. No other ingredients (maybe water)....
I've found some in Shoprite. Haven't made them for a while, but I've made pumpkin muffins using this.

Lol same! I always want to make it! But I haven't found anything labeled pumpkin puree in the Jewish stores!

It's just canned pumpkin. As opposed to pumpkin pie mix or pumpkin pie filling. You'll find it in the baking aisle of most grocery stores. (Though I don't have a jewish/kosher supermarket near me to know if they carry it or not).

Pumpkin pie filling or pumpkin pie "mix", labeled as such, is pumpkin mixed with water, sugar, salt, spices, and flavoring and possibly other chemical additives you don't need. canned pumpkin is just plain cooked and mashed pumpkin, aka pumpkin puree.

Ingredients
4 cups warm water, no hotter than 115 f
2 cups sugar
2 T instant dry yeast
3 eggs
Half a cup cocunut or canola oil
2 cups canned pumpkin puree not pumpkin pie filling
1 5 pound bag high gluten flour plus up to one additional cup
1T salt
2 beaten egg whites for egg wash
Streusal topping
1 cup flour
1 cup sugar
1/2cup coconut or canola oil
1 cup mini marshmallows
Method
1. Proof the yeast : into a large bowl ( or in the bowl of a dough machine) combine very warm water with sugar and yeast. Let it proof till it bubbles, about 5 minutes.
2.in a smaller bowl mix eggs oil and pumpkin
3. After proofed add pumpkin mixture to yeast mixture and mix for 1 min. Gradually add half the flour from the bag, then salt, then rest of flour. If sticky add up to to 1 more cup
4. When not sticky let rise 2 hours
5. To prep streusal: combine with fork
I've never made the challah yet bit have made the streusal topping and it is out of this world. Just made it this week and put on top of carrot muffins 😋
