This is a somewhat uncomfortable question, which is why I am posting anon.
I’d love to cook more beans and legumes as they are so healthy, but my whole family gets incredible gassy and bloated from even a little of beans.
Did you ever find something (enzymes, supplements - anything) that helps with flatulence and bloating from eating beans and legumes?

If you use canned beans, rinse them first.
Also if you eat more beans, your body will build up better digestive enzymes for beans and be less gassy.

I soak for 24 hours. I cannot understand how there are chulent receipes that call for using dried beans without soaking first. Those type of receipes are a sure fire way to disaster for it's consumers and everyone else around.

I soak my beans. When the water turns brown I rinse and put fresh water.

I always do but the flatulence and the bloating is still there…

That is so interesting - I never heard of this idea.
I just want to make sure I understand what you mean: you just cook them with raw onion and carrot?

Interesting: the idea that the body will adjust better over time. The problem is that we won’t get there: too much digestive issues in the meanwhile. We need to find something that works in the short term.

Yup. I soak them for a few hours or overnight. Rinse well. Then cook together with one carrot and one onion.
I always make big batches, and freezd any extras in portion sizes, so I can pull them out when I want them.

Put a pinch of baking soda in the water while soaking them. Apparently that helps break down the sugars or whatever chemicals, to reduce the gassiness.

I agree that soaking doesn't help reduce gassiness for us, although I still soak for other reasons.
