Blueberry Crisp cupcakes

This is what I make with the blueberries. They are delicious.

Cupcakes:
2 cups of flour
2 tsp baking powder
1/4 tsp salt
1 3/4 cups granulated sugar
3/4 cup milk or soy milk
1/2 cup (1 stick of marg), softened
1 1/2 tsp (pure) vanilla extract
3 egg whites
3 cups fresh blueberries

Streusel:
1/3 cup flour
1/4 cup brown sugar
1/4 cup oats
1/2 tsp ground cinnamon
1/4 cup (1/2 stick) marg.
1/2 cup chopped walnuts (I skipped these cause of nut allergies)

Preheat oven to 350. Line cupcake pan with papers.

For cupcakes, combine 2 cups flour, baking powder,and salt in md bowl. set aside.

In a large bowl, beat marg and sugar until fluffy Add milk and vanilla, beat at low speed for 30 seconds. Gradually add flour mixture, beat at md speed for 2 min. Add egg whites, beat 1 min. Spoon batter into prepared muffin pans until 1/2 full. Spoon blueberries over batter. Bake 10 min.

While muffins are in oven, prepare streussel, combine flour, brown sugar, oats, cinnamon. Cut in 1/4 cup marg until mixture resembles coarse crumbs.. Stir in nuts

Sprinkle crumbs over partially baked cupcakes. Return to oven and bake 15-18 minutes. Cool.

With the price of fresh blueberries here in EY this recipie would cost...$30 or upwards to make!

I just reread - not one cup of blueberries but three...make that over $100.
Lekoved shabbos? My entire shabbos for nine people doesn't cost that....

I dont know if apples are any cheaper, but I think it would be good with diced apples. Prob e/t is very pricey, though. I salute all e/o in EY during a shmita year (and always)!

When I make muffins, cake or cupcakes using fruit, I always find that I prefer to use less fruit than is called for in the recipe. Personally, I prefer a greater cake to fruit ratio than is suggested, and I don't want to spend as much money. Sometimes I'll substitute a less expensive fruit, but every fruit doesn't work in every recipe.

It is supposed to be "healthier" but reality is that when I made them, I used one egg and the white of a 2nd egg.
