I want to make muffins or cupcakes for a Diabetic does anybody have a good recipe??

Enlitened Kosher Kookbook has some almond cheese muffins. You can definitely taste the splenda though. But if you're using artificial sweeteners and are used to them try her cookbook (Nechama Cohen's) who is sometimes on this board.
