That's very good. Also look at the ingredients. Bread only needs flour, water and salt. The less ingredients the better and less harm to your metabolism.

I honestly don't think switching to einkorn will make a difference with weight, not sure why you are so convinced that this is the answer.

What I found helped cut out bread was replacing it with a ton of protein and fat. So instead of 2 eggs cooked in some oil spray and 6 slices of bread, I do 4 eggs cooked in a generous amount of coconut oil, plus avocado and olives. No way you can be hungry after a meal like that, and blood sugar stays stable.

I eat other foods. I lost thirty lbs, of course I'm diabetic so I have nochoice. if you want to give it up, you can.

It’s hard in the beginning but I guarantee you if you stick with it it’ll be a blessing for you!
You’re right that carbs increase hunger and cravings, so does sugar.
Once you cut out those items, you will find your hunger and cravings gone, and sticking to a healthy eating plan will be so much easier! I lost over 20 lbs doing that and it was really easy after I got past the initial phase.
