How early can I boil potatoes to then smash and roast

Technically after boiling they can last 2-3 days in the fridge and longer then then that in the freezer. The taste might be affected though.

Will they still be yummy if I boil them today and roast them tomorrow

I don't see why not. It's just easier to smash while warm/hot

Ok I’ll have them all smashed and ready to put in the oven.
Roasted potatoes taste gross if made the day before and reheated
Will it be the same with pre-smashed potatoes but roasted fresh

I would tell you to smash it today but spice it and bake it tomorrow
