But how amazing could flour water and salt be?? | That's why traditionally these country loaves that are trending were reserved for weekday, they are heartier and coarser and last longer, and even when sourdough was the only method of leavening, shabbos challah evolved to more of a brioche or enriched dough with eggs, oil and sweetener added. It was considered more refined and upscale and elegant, not to mention expensive. But rustic is in style today, so people can still go for it.

How many times have you eaten it? I didn't like it at first but now I really do. It might be an acquired taste and it definitely varies by baker.

I don't think sour dough bread is particularly healthy.
I do think whole wheat bread is a lot healthier than any bread made from white flour and sour dough bread is generally made from white flour.
Traditional challah has a very distinctive texture and flavor - it's delicious - and so is sour dough and so it whole wheat.
So yes I think sour dough bread is delicious but I also think that traditional challah is delicious and the taste is more of a treat - I could actually enjoy eating it plain like a simple cake because it has a subtle sweet taste and wonderful texture.
I think it really depends on what you are eating as a pastrami sandwich on challah would be weird - at least to me.

I didn’t have to acquire a taste for my regular challah! I loved it after the first bite!

Don’t particularly love the taste, but the crust is super crisp and I feel better when I eat it over regular challah. I still like regular challah better though. I eat both.
And not all sourdough tastes sour some more than others. I can’t eat the ones that are sour.

But it isn't the sour dough that makes it "healthy" - it is because the grains are whole grains and not processed.
I happen to like whole grain bread a lot but I also like white flour challah a lot.
For every day I use whole wheat bread for sandwiches unless it is pastrami and then it is rye bread
It isn't that whole wheat isn't delicious - I do find it delicious but just that I pair different breads with different foods.
I like the combination of gefilte fish and white challah for example.

It breaks down a lot of the phytic acid which is essentially an anti-nutrient that grains are high in. It makes grains lower glycemic. It breaks down gluten which is an extremely hard to digest and inflammatory protein for a lot of people. It's full of gut friendly microbes though how many of those survive the baking process is questionable. Among other health benefits.

Neither does a chocolate chip cookie need acquired taste. Would you have that for lunch?
How it that a marker of things that are delicious?
I can assure you that wine is bitter, sushi is fishy, and steak is umami ish.
I can assure you that a 5yr old will pick a cookie over all of the above.

It's an aquired taste. I love a toasted thick slice for an open faced sandwich like an avocado toast with a runny egg, but I do prefer regular challah.

Some people think their challah is amazing and it isn't, I'm sure you know what I mean, same thing with sour dough.
