I have the same question. Had this question for years while on keto but never found the answer!

Let’s hear the wisdom from some clever poster

I use Royo challah rolls they have 6 net carbs and are pretty tasty- especially eaten with some delicious dips!

I ate 1/4 of a whole wheat matzah. I thing one whole matzah is about 24 net carbs so 1/4 is about 6 net carbs.

Can you bench on 1/4 board of matza? I thought 1/2 was minimum

Ask your rav how much whole wheat matza you need to eat. He might give it to you in weight. I weighed an amount of whole wheat matza befor Shabbos but I’ve done it for long enough that now I just look at it and know if I ate enough.

My DH makes his own keto rolls in our bread machine.

2 3/4 C water
2 T olive oil
3 C carbalose
3/4 C fine bran
3/4 C oat fiber
1T sugar
3 T lakunto
1 T molasses
2 tsp salt
4 T gluten
2 tsp yeast

After rising in the bread machine, shape into balls and put in greased cupcake tins (he weighs the total, then makes sure each individual ball is the right weight).

Let rise again in a warm place, then bake about 45 minutes at 350.

Mission Low Carb tortillas.
Not on keto myself but friends of mine who are on keto or had gestational diabetes (diet controlled) used those. Much tastier than matzah...

I live in Brooklyn and have seen them in most kosher supermarkets. If you want specific ones you can PM me. They are pretty expensive I believe 13.99 for 6 challah rolls. I think they are worth it. I feel like I'm eating something substantial and am not deprived. Even my kids like them!

bran and oat fiber are not hamotzie. only oats and flour are hamotzie.
you need to eat 27 grams of bread for hamotzie and betching. I weight either a sour dough roll or a whole wheat roll before shabbos. I'm diabetic. I only wash once per day shabbos/yomtov though
