Is Wednesday night too early to bake our Challah for Yom Tov?
We don't have any room in our freezer!
If tonight isn't too early, what would be the best way to store our challah? Again, no freezer space!

Make fish and meat Wednesday.
Keep challah for Friday. Or at least Thursday.
You don't want it stale.
Other things to make in advance. Salad dressings, dips, kugels, soups
Even peeling potatoes and putting them in water.
Anything that can come out of the freezer Thursday night for a slow defrost in the fridge? That way you can at least freeze Sundays challah?
Again, meats and kugels and soups can all start defrosting Thursday

Hmmmm.....ok! Thank you!
Would tomorrow night (Thursday) be ok for the Challah? Erev YT is a huge rush and Challah is such a big undertaking, especially for so many meals! I get very stressed doing major cooking cooking Erev anything!
Would making things like cakes and muffins be good tonight?
My closest neighbors also have zero freezer space as well as my mom who lives 3 blocks away!

I just put up my dough which is going to stay in the fridge for 2 days until I bake it. it will be fine.

Make the cake and muffins tonight.
Make challah dough tomorrow night. Do not let it rise. Put it right in the fridge overnight.
Bring it back to room temp on Friday and braid the challahs.
