OP, what do you mean by scratch? As in actually making the noodles, then cutting them, etc?

2 cups flour
2 eggs
½ tsp salt
2 Tablespoons water
Knead until smooth. Cover and let it rest for 30 minutes. Form a rope and flour it. Let it dry uncovered for 1-2 hours. Grate and then flour the pieces. Dry on a cookie sheet lined with parchment paper. Boil.

Egg noodles in tiny little square shapes, toasted in oil and flavored with some spices.

I think you can toast in the oven rather than leaving to dry?

making them and grating them.
its not noodles. its called egg barley pasta - farfel.

When we made them back in the day, we used a blender kind of thing to make the small pieces.
Only problem is, it can burn the motor out, so you gotta be careful.
