Making leek patties for the first time. Trying to follow the between carpools recipe. It says to use the "white and green parts only" and to cut off and discard the rest. It's all white and green? Which part do I discard? The darker green tops? None?

Discard the hard stiff dark green leaves. Use the white and very light green parts. Enjoy!
