I don't cook my challah in tin pans .. I just put them right on a baking sheet, I am wondering if thats a problem? Why do people cook in pans and not like that? My challahs are turning out a little flaky and I am wondering if thats why..

Pans just keep it organized and easier to transfer
Your flakiness is an issue of kneading and ingredients, not of the pan. Try to see if you can change your recipe and kneading to make a difference. It made a difference for me.

The tins make them come out in a uniform shape and they rise nicely.

I cook in pans because it helps the challah keep a nice shape. I used to bake on a cookie sheet but they would spread and come out flattish. They look prettier when baked in a pan.

The pan helps it rise in height instead of spreading out flatly.
Flaky dough means too much flour and not kneading the dough enough by hand once the dough is ready, for 5-10 minutes. It also helps make it more fluffy and less heavy.

I don't put it in pans and have never had a problem. Try less flour and kneeding your dough more.

They come out fuller and take up less space. The oval Challah pans are really nice.

Me too.
Six-strand challos (which I haven't yet mastered) seem to keep the shape while on the pan better than three- or four-strand.

With or without pans, you *bake* challah, there's no such thing as cooking it.
