Are you careful about being happy on Yom Tov?
I was in a terrible mood today and I mean terrible, and felt so guilty after.

No. Moods and feelings can’t be controlled.

So what's the Mitzvah then?
I probably can snap out of it if I try hard enough or distract myself

I would think that the mitzvah is making the effort to snap out of it. If you're naturally in a happy mood for 8 days you're just lucky. If you pull yourself out of a bad mood and into a better one a bunch of times, that's avoda.

Ein Simcha ella bevasar veyayin. There is no joy except with meat and wine. (You can tell that was written by a male.) I'm not a lover of either one and get "fleishiked out" by the second day of RH. Consuming more meat and wine is not going to make me happy. Eating milchiks and having milk chocolate or real ice cream for dessert is going to make me happy.
Any blanket statement about what makes people happy is bound to be wrong at least some of the time. Rambam, whom I absolutely revere, says that a man is supposed to give his family gifts to make them happy on YT. For women, shoes and jewelry; for children, nuts. Great if you're into shoes and jewelry; I would only get annoyed if DH bought me either one. And IDK many kids today who would be jumping for joy to get nuts as a gift.

Thanks. I hope I got someone of a mitzvah if I tried but didn't really succeed.

Sukkos is the most miserable time of year for me. So much work, so much family tension, pressure. It’s ridiculous.

I'm sorry sister. I know what it feels like. I hate Yom Tov, every part of it.
