You can put BBQ sauce on it and grill.
Or you can take the chicken off the bone and make chicken cacciatore (saute an onion and pepper, add the chicken pieces and tomato sauce, then mix with cooked rice) or chicken pot pie. My kids also like chicken pieces in mushroom sauce.

I mix cut up coked chicken (or turkey or beef)with (semi-defrosted-if I have time) frozen mixed vegetables (the peas, corn, carrots, beans or just peas &carrots). Add some flour and basic spices (whatever your family likes), a little mustard and some margarine. Put it in the pie crust, cover the pie (with another crust or puff pastry). Make slits in the top and bake at 375F until the crust is well baked (usually over an hour for a full size pie)

You could also make a chicken stir fry over rice or add it to egg noodles with cooked veggies for a chicken pasta salad.
