Forgot to freeze chicken soup after Shabbos

It was cooked on Friday.

Would you still strain out vegetables and freeze it tonight?

Or should I just use it today

My rule of thumb is Thurs cooked and freeze by Tues. You are fine to freeze it now.

This flies in the face of everything I learned about food safety, but I keep chicken soup with veggies in the fridge a whole week and serve it the next Shabbat and it's fine. Now the fridge is quite cold and as a dedicated fleishik fridge isn't being opened a hundred times a day, plus the soup is usually, though not always, reboiled at some point during the week. The freezer isn't big enough for freezing soup in any meaningful volume.

If you strain veggies do you use the veggies or throw it away. When you defrost the soup do you ad vegetables then?

I don't like how the veggies taste once frozen and defrosted. So I throw most away since I don't what to do with them (sometimes I'll keep some for my toddler who likes to eat soup veggies). I'll serve the clear soup the next time.
