We have been using the same recipe for challah for many years, and now it’s time to switch it up. Can someone please share their easy and delicious fluffy water challah recipe? We’d really appreciate it.

Put in mixer or bowl:
4-5 Cups Warm Water - the more water - the fluffier but stickier to work with!
4 T dried yeast - I use from the 1 block of Fleishmans or Gefen. I find the packets don’t work well.
1.5-2 Cups sugar - or honey
Let sit for 10 min (until you see yeast activating)
Add 5 lb challah flour
4 T kosher salt
4 eggs
(1 stick margarine + 1/4 C oil ) or 1 C oil

Mix in mixer
Let rise until doubled
Punch down and make into challahs
Let rise again for about 30 min

Egg then and optionally put on crumb topping:
1 C flour
1 C sugar
1 stick margarine

Bake at 325-350 until golden brown

Sometimes I make with 6 lb bag of flour - then I add 1 egg, 1/2-1 cup water, a bit more sugar, oil, and yeast

Challah
Rebbitzen kanievesky

5 cups warm water
4 tablespoons yeast
1 and 1/4 cup sugar
1 and 1/4 cup oil
1 1/2 tablespoon salt
5 lb bag flour


place warm water yeast and sugar in a bowl of electric mixer
Let sit about 7 minutes until it becomes bubbly
Place the mixer on low and add oil and salt. Slowly add the flour. One Cup at a time. Continue mixing on low while adding flour for about 10 minutes.
Let it rise for 1 hour covered

I tried different recipes, and my picky DH likes this best:

Fluffy water challah

5 lb high gluten flour

1/3 c corn starch (secret Ingredient)

4 T + 1 tsp dry yeast

1/2 c sugar

1/2 c honey

2 2/3 c warm water

2 1/2 c seltzer

1 c oil

2 T sea salt or regular salt
........

Put yeast in bowl, 1/2 sugar. Add warm water and seltzer. Sprinkle handful of flour on top. Wait till yeast bubbles.

Add 6 c. Flour and starch. Mix well.

Add oil.

Add honey.

Add salt.

Mix well.

Add rest of flour.

Knead dough 5 minutes. Let dough rest 3 minutes.
Knead dough another 3 minutes.

Let dough rise an hour, add a bit of oil on surface of dough. Cover with saran wrap.

Take challah.

Knead dough for one minute.

Braid challah. Put in oiled pans.

Egg challah and Sprinkle with sesame.

Put pans on lowest rack in cold oven.

Turn oven on 200 degree. Bake for 30 minutes.

Raise temperature to 350 and bake another
30-40 minutes.

Nope... comes out fluffy and amazing and the dough is very easy to work with. I follow the recipe exactly. It is written In one of the Bais Yaakov cookbooks

I do something like this but use a cup of sugar or less. And 1/4 cup of KOSHER salt. I add more water as needed to make a soft dough but not too much that it’s sticky. You can also put less oil if you want. A cup or a bit less will work.
