How do you turn out perfect latkes without the latkes sticking to the pan?

The oil has to be hot enough and don't try to flip too early.

In addition to make sure oil is hot enough before you drop in your first latke, I find I do need a non stick pan.

This, but also you need to have REALLY squeezed out all the water from the potatoes.

I put the mixture in a clean towel, and squeeze it out really well.

I do this but I don't get it. After you dry everything egg adds liquid

Be patient with them. Make sure the oil is really hot before you start dropping them in, and give them a good few minutes before flipping. You want a really nice golden crust all around before you try to flip them

You don't want a totally dry batter. But potatoes produce a ton of liquid when they're shredded and when they're left to sit. If you don't get rid of most of it, you'll end up with sad, soggy latkes. I pour the mixture through a fine mesh strainer and push it down with a spoon. I usually have to do it again halfway through since the potatoes continue to produce water as they sit

I don't actually find that squeezing out the liquid helps much. My latkes are very very crispy whether I squeeze out the potatoes not...
