yes if you keep the gas low, check the water regularly and use a good pot. Some pots cook out too fast, so make sure yours doesn't.

Chicken soup tastes better and richer the longer it cooks
I actually keep some on the blech for shabbos day in the winter and it’s incredible

I do sometimes in the crockpot. Tastes good but much more intense than classic chicken soup - and it looks more like beef broth. Very brown.

We call it bone broth. Supposed to be super healthy. I do it in the crockpot.

Brown or gold?
I find the longer I cook my soup it becomes more gold and tasted delicious.

Every week I make the chicken soup on Thursday night it stays on the stove until Shabbos. It's delicious.

I once ate by a friend who keeps her soup on the blech all night and it was delicious, so yes you can. Since then we do it every week. Only once did it spoil, and then it was obvious.

I don't know what happens to everyone else's soup but mine gets BROWN. Could be due to the amount of veggies I leave in and nothing to do with the amount of time. Don't know. But yes, it absolutely looks brown like beef broth or onion soup.
