Iso best tomato dip recipe? is it freezable?

bonus if it's freezable. I have a lot of tomatoes that are not so firm anymore.

dont know about freezable but if your fam likes when its hot I use the Tuscanini crushed red pepper ads an amazing flavor. no garlic just salt and oil

I like to make a roasted tomato dip, and it's freezable.

I just cut up a bunch of tomatoes in a pan (either grape or regular tomatoes, doesn't matter....) add a few cloves of fresh garlic, a jalapeno (seeded), and some regular pepper (any color, can skip if you don't want). Drizzle generously with oil, season with salt and pepper.

Roast in the oven around 45 minutes (I put it in with all my other Shabbos baking) and then process in food processor to desired consistency.

I freeze in little plastic containers and use as needed.

Not op but this sounds interesting. How does roasting it impact the taste?

Non roasted tomato dip is freezable also. No recipes offhand but I've frozen many times.

8 tomatoes on the vine
4 cloves garlic
1 cup oil
2 tsp Cumin
1 Tablespoon salt
1 squirt ketchup
5 sprigs fresh parsley
Blend very well for 3-4 min
Eta. 1 Tablespoon paprika.
I hope you didn't make this recipe because the paprika adds. Also how ripe or unripe the tomatoes are really effect the color and taste.

I would avoid freezing if it had mayo in it which most do

Most tomato dips do not have Mayo
I have frozen but it does change the consistency a little. Oy gets a little watery
Mine recipe is similar to the one posted above
I don’t put ketchup and put a splash of lemon or lime
I also like to add a hot pepper or some hot pepper flakes

So occasionally we make it spicy. We take off half and add hot peppers from the jars.

I wouldn’t freeze raw tomatoes but any cooked tomato type dip can be frozen.

Tomato Dip

2 over-ripe tomatoes
2 garlic cloves (if tomatoes are large, garlic should be large; if small, match up small cloves)
1/2 Jalapeño pepper
2 tbsp olive oil
salt and pepper, to taste

Whiz tomatoes, garlic and Jalapeño in blender. While machine is running, drizzle in olive oil in a slow stream until tomato dip is thick and emulsified. Season with salt and pepper to taste.
Don't freeze.
