There will probably be some hotel programs over midwinter vacation, look out for advertisements.
Melour Hotel in the Poconos offers food every shabbos.

The only hotel I'm aware of that offers food every shabbos, is Melour.

They're in Tannersville, near Hunter Mountain. Yes, technically in the Catskills.
