to make enough challah to take with a bracha, you need to do two big batches in the bread machine.

I have found this recipe to be very versatile with different types of flour:

5 cups warm water
4 T yeast
1 T sugar
-- Mix and set aside.

3 eggs
1 ¼ C oil
1 ¼ C sugar
½ C honey
1 T salt
-- Mix
--Add yeast mixture. Mix.
--Add half of 5lb bag of flour. Mix.
-- Add rest of flour. Mix.
-- Cover and let rise for 1hr+
-- Shape
Bake on 350°.
Rolls: 25 min
Bigger Challos: 35 min

I have done spelt, whole wheat, replaced sugar with honey. Usually I do plain white though.

Funny story, but since I started kneading by hand I find myself baking so much more often. It took away the difficulty somehow that there’s no machine to wash etc.

Make sure that your bowl is big enough to handle the kneading.
Also a good idea is to put the whole bowl in the sink so that if anything spritzes out when you knead it doesn’t make a mess, and the position is perfect for kneading- not too high like the countertop. (You gotta find what’s comfortable for your height. For some table or chair height is better).

I put in all wet ingredients first and combine, then add the flour in2 shifts. The whole kneading is about 10 minutes.
