Cheese Cake Curls

I want to decorate a cheese cake with curls. How do I do it? Peel the chocolate directly over the cake? Or is there a layer (I.e sour cream, choc glaze) in between to make it stick?

I usually put sour cream to prevent the curls from flying all over the place

you can use the white and brown "klik" chocolate bar (in a green wrapper) and peel that lengthwise. comes out beautiful! (mishpacha had it in one of their mags)

You can make a glaze of sour cream and sugar and pour it over the cheesecake, then sprinkle the shavings on top of it.

when I put sourcream & sugar on top I mix some vanilla and lemon juice and then bake it some more ... but I imagine when you make the curls it will stick by itself to the warm (not hot) top ...
