I’m trying to up my birthday cake game but I keep having an issue where the edges of the round cakes get very well done as the rest of the cake bakes. I have real, decent quality pans.
Is it my oven?
I don’t like that the edges of the cake are crunchy and I don’t want to cut them off because the cake will get smaller.

Any ideas?

Most obvious is that the oven is too hot - if you have a convection oven, you generally need to use a lower temperature OR your oven isn't calibrated and you should get an oven thermometer - those are inexpensive and useful

Dark pans cook more quickly than light pans

There are strips that are sold that cool down the edges so the cakes don't brown too quickly

Or one of these

Why did my cake burnt around the edges?

Problem: The sides of my cake are crunchy or burnt.

It could be that too much fat has been used to grease the tin; the cake tin wasn't lined sufficiently; the oven was too hot; the cake was left in the oven for too long or a fat that is not suitable for baking has been used.

Thank you so much for your ideas.

I do use convection bake on my oven but I thought the food needed a shorter cook/bake time. I didn’t realize it needs a lower temperature too.

If you have a convection oven, lower the temperature by 25 degrees and see if that solves it. Standard advice is to lower 25 degrees for any recipe that doesn’t specify temperature for convection oven.

Convection should be at 325° instead of 350°

Same baking time at 325 (instead of 350)?

Yes. Depends on your oven. I always do 2-3 minutes less than recommended for my oven
