Is 8 inches better for taller people so you don't have to bend down?

Only if you have issues with bending like if you have back problems. Otherwise the deeper the better.

The top of the sink is counter height, if you can’t rest your elbows on counter because you’re too tall, shallow sink won’t help.
The deeper the better, think big pots, stacks of dishes

My sinks are about 9.5" deep, but actual sink depth is about 8.5" inches. They sit under the granite. And they are wonderfully deep enough. We also have tall faucets which add to the versatility in what can be placed into/washed in the sink.

I’m a very short person and I cannot work with deep sinks. I specifically asked for NOT deep sinks and they are still too deep for me

It really depends. If you are short, a deep sink might nit be comfortable.

Also the configuration matters. I have a farmhouse style sink so I can get much closer to the actual basin since there is no counter in front of the sink.

I had discussed depth with the guy who I ordered the sink from and he suggested the shorter depth for comfort. I have a huge single bowl sink with a high arc faucet and everything fits great and lies flat. So much better than my old sink which was double bowls with a standard faucet.

Deeper sinks not only hold more and bigger items, duh, but they splash less. The shallower the sink, the more splashes out of it when the water is running.

Another vote for deeper the better. I love my deep sinks. The only shallow sink I have is in the laundry room. I made it so I can bathe the baby there.
