I accidentally left it out on a flame thats just about higher than low but not medium from 6pm overnight. Now my soup is very dark brown colored and smells quite bitter. My DH just put them in containers but I'm not sure if it's ok to eat since it was cooked for so long.

It’s okay in the sense that it’s not spoiled since it’s been on the flame.
It might taste a little cooked out but you’ll eat it tonight and decide if you want to eat whatever you froze.
Maybe you can make some kneidlach with it. It can only enhance the flavor.

Also, I know people who eat chicken soup Shabbos day that cooked all night and it's brown. Strong taste but good, if you like it.

I love cooking my soup for forever. Just add water every so often. I would literally cook it overnight if DH let but he's nervous about leaving a flame on all night

Also if you don't like the color, just remove the chicken, Zhuzz it, shred the chicken and return it to pot. I actually do this every week!
