I used to do Friday, figuring shabbos was the day I ate the most. But now, I do Tuesday. It keeps me accountable for Shabbos!

Wednesday, it's long enough away from my overeating on Shabbos. But not too far into the week so that I get to see progress to keep me motivated for the next few days.

No scale in my house. I would like to do my best to ensure no one in my family has an eating disorder

This comment is absolutely ridiculous and has nothing to do with question asked

I do Sunday, because I like to weigh first thing in the morning before I've eaten (makes me feel lighter ) and Sunday is the least hectic morning

I actually go to a dietician every week. But yes I do own scales in my house. You don't have to have an eating disorder if you own scales. And if someone doesn't own scales, it doesn't mean that they don't have one!

Of course, but there is a strong correlation and probably causation to growing up in a home with a scale and strong emphasis on one’s body weight and developing disordered eating. I would like to avoid that for my family if possible. Despite the frum community valuing life and health, they often promote eating disorders, which are actually the most fatal mental disorder and a very real risk for our children
