Specifically without sugar. I think Stevia is okay to use. Very little oil.
Maybe I should just use my regular challah recipe and cut down on the oil add stevia and swerve? Would the dough rise? Maybe I can use a tiny bit of sugar to proof the yeast?
This is for someone who is pre diabetic and has high cholesterol among other health issues.
Any ideas welcome!

Sourdough is just flour and water.
I assume you can just put a tsp of sugar to proof the yeast and then skip the rest of it completely.

The added sugar in challah is a miniscule amount compared to the carbs from the flour. Seems comical to me to.use Stevia or swerve in such a high carb food.
Also, swerve isn't healthy.

Is it considered unhealthy if I use spelt flour?
Why isn’t swerve healthy?

Why is sourdough healthy if it’s loads of carbs from the flour?
I don’t think adding an egg and a few tablespoons of oil will make it very bad.

If the person has health conditions he/she should see a dietician (insurance should cover it if pre diabetic) and get a meal plan.
I'm sure there are recipes the dietician can suggest or ready made products you can buy.

There are not any. You can make challah without sugar or oil but it won’t help diabetes because it’s made with flour. We once made something using gluten but it was disgusting.
Either they need to control their portions or they should get a heter not to wash.

So I think I shouldn’t waste my time experimenting. I think we should either have small rolls available or a piece of matza.
It’s not diabetes yet. It’s pre diabetes. So we have to be careful but not a strict.
With a roll- that will be it when finished. No additional slices of challah.

I use Rorie's low carb gluten free dough mix and make rolls out of it using her easy recipe on the back.
They are DELICIOUS and much much better for you than regular challah if you are prediabetic.

Thank you for this suggestion. Can you share a link for Rories low carb gluten free dough mix? Which ingredients do you add?

Theoretically sourdough can be better for blood sugar because a lot of the starch is broken down by the fermenting process and is in the form of resistant starch which doesn't raise blood sugar in the body. I don't know if this plays out as it should in reality. I guess the individual would have to test his blood sugar with reg challah and then a slice of sourdough of the same volume.
Egg and oil aren't bad for diabetes or pre-diabetes. It's the flour/carbs that's the issue.
