I've seen this recipe on this website a few times
1 cup sugar
2 eggs
3 cups ground nuts.
Does this come out ok with no oil? How come it's not necessary?

No oil. It has a more marzipan-like consistency, it’s not so much of a cookie-ish cookie, but totally easy and delicious.
Between the eggs and the nuts, there is enough fat/liquid.
I make these every year!

I know people on this site rave about this recipe but nobody in my house would eat these cookies. Everyone would rather just eats nuts.

Hmmm, I sort of get it.
I wonder if I should try to add my own oil?
I'm afraid of my family having the same reaction, 3 cups of nuts is not so cheap.

I add in a cup of shredded coconut. It acts like oil and gives it a great texture.

No oil needed. I do 3 egg whites instead. Comes out very good and chewy

I haven't made that recipe but nuts are high in fat.
Mishpacha actually just printed a recipe for "fat free cookies" with almost 2 cups of nuts. I'm not anti eating things with fat but that isn't fat free...

It's delicious. The ground almonds have a ton of oil naturally.
Secret is in under baking and getting a chewy cookie.

I guess the no fat part means no added fat. anyway, that's my recipe. if you don't like it, then surely you can just eat the nuts and the eggs separately.

What the others said, it doesn’t need oil. I would use almonds the first time you try it, as that is milder and sweeter than walnuts. I personally vary the nuts I use.

I married into a no oil on pesach family, so I’ll share a few no oil recipes in case other no oilers come across this thread
Walnut Cookies
2 eggs (or 1 egg and 2 yolks)
1 ¼ c sugar –
Beat eggs and sugar
8 oz walnuts
Squeeze of lemon
Cinnamon
Cocoa
Refrigerate overnight, bake 15 min at 350
Cookies:
2 egg whites
2 cups almonds
¾ c sugar
Beat egg whites slightly, then add the other ingredients. Knead w/ hands. Make balls. Leave space will grow. 250 for 1 hour
More cookies:
4 egg yolks
2 c ground nuts
¾ c sugar
Beat egg yolks and sugar till light. Add nuts by hand. Fridg for half hour. Make balls
Bake 350 for 10 min/til golden
(Halved this recipe it made one cookie sheet worth, were good chewy cookies)
123 Cookies
1 c sugar
2 eggs
3 c nuts

1-2-3 Almond Cookies
1 cup sugar
2 extra large eggs
3 cups ground almonds
Whisk together the sugar and eggs. Add the almonds (vanilla and salt optional) and mix until well combined. If needed, place in freezer for 30 minutes to make batter easier to handle.
Form into 1” very round balls (use a small cookie scoop for easy forming). Arrange on 2 cookie sheets.
Bake in oven preheated to 350 for 14 minutes.
Cool completely before removing from pan. (I like to freeze the cookies on the pans and remove them once solid and frozen.)

you can also bake them in a pan as a bar. you don't have to make individual cookies.

Thank you! In a pan is so much easier? 9x13? How long do I bake it? I made one batch yesterday. It needed more than 12 min but was soo good. It had like a chewy chew to it. I want to achieve that texture.
