Sick of my food

I’m sick of the food I make. I was putting together my seder menu and realize my Shabbos food can mostly be made pesachdik. But me and my family are getting tired of my food, I want to spruce it up. I have chicken recipes and meat. Does anyone have yummy pareve sides that make it feel like yuntif/Shabbos? I want to make new foods for my family that they’ll be excited about

What about different kinds of rice? People add dill and Lima beans (I think) or craisins and saffron/turmeric.

Also yapchick instead of regular potato kugel.

Other kinds of kugel- Sweet potato kugel, mushroom kugel, apple kugel

Roasted potato with sweet potato is yumm
Or roasted potatoes with spices

I don't have my pesach recipes out yet but the variety is endless. And we barely use anything. We're Ashkenazi so no rice and also non gebrokts. We do use potato starch. I make blintzes with egg crepes filled with either sautéed shredded veggies or Mashed potatoes. Then onion sauce over it.
Also make doughless knish.
By nights I do chicken.
Cutlets fried in batter, cutlets fried in walnuts. Bottoms with spices, stuffed bottoms with veggies.
By day I do roasts.
I don't have enough meals to serve everything!

Quinoa
Spaghetti squash kugel
Mash potatoes with tons of carmelized onions in the center
Roasted mushrooms all types
Stuffed mushrooms if you want to work
Spinach kugelletes
Roasted butternut squash
Leek patties like we do on Rosh Hashana
Fried eggplant slices
Artichoke bottoms - sliced with green olives and lemon.
Smashed baby potatoes
Hamoud
Roasted cauliflower 3 colors - turmeric, plain, smoked paprika drizzle with Tehina or faux techina made with almond butter
Peas sautéed with cumin
There’s a baked Kibbe recipe using ground almonds instead of bulgar

I don’t have exact recipes

Spinach -
Squeeze the spinach
Add salt, pepper, onion powder, garlic powder
Dehydrated onion or fresh chopped onion
Beaten Eggs - 2 per package of spinach
You could add matza meal but I don’t

Get parchment cupcake papers and cupcake tin

Fill bake at 375/400 until done
Freezes nicely - Reheat frozen

Clean really well
Take off stems and chop the stems- I do this in the food processor
Finely chopped onion and garlic
Almond flour
Salt, pepper
Sautée onion then garlic then mushroom stems. Season. Add almond flour (maybe 1 cup) until it resembles stuffing
Lightly coat caps with a little bit of oil
Season lightly all the caps
Spoon into mushroom caps
Bake 350/375 until caps looked cooked
Do not freeze

Chop and sautée onion and garlic
Add 1TBSP (more or less however you like)
Cumin and sautée until it smells fragrant
Add peas
Season with salt and pepper
Sautée everything for 5 min.
Add about1/4-1/3 of water - no too much
Simmer covered on low for about 15 min. (more if you like them mushier)
Take off lid and raise the heat to high and reduce the liquid to about 1/2

The Kibbe pie I posted is really good

I make taboulli using cauliflower rice
Just sautée the cauliflower rice until completely dry, but on a low heat. The secret to tasty cauliflower rice is it should be very dry

Has anyone tried the zucchini tarts from the Ami pesach recipes? Or the nigiri potato base ( I'm only interested in the potato part not the meat)

One year egg prices were very high. So I steered away from kugel. I do mashed potatoes, butternut squash cubes roasted . Sweet cooked carrots, spicy roasted carrots. Spaghetti squash. Zoodles . I feel like everyone really felt better. I have a limited number of veggies I use pesach.
