I saw this recipe last year (one person adds potato starch and another omits eggs/starch and just increases the oil).

But I was actually thinking of this recipe with zucchini, using 1/3 cup potato starch instead of the 3/4 cup flour.

The nut butters are very helpful as an addition for meals or snacks. You can make a chocolate /nut butter dessert. Sorry, I don't use recipes really. I would melt chocolate chips and mix in the nut butter and freeze it. You can add whatever toppings you use.
You can dip eggplant slices in almond flour or potato flakes or starch and fry or bake them with salt and pepper, or whatever spices you use.

Just to update you all, I thought the wraps were not bad as a backdrop to the filling but almost everyone else just ate the filling and left the wrap.🤷‍♀️ It’s thicker than your typical wrap. I think I will try to make some “pizza” out of the rest.
