Anyone have a good way to precook rib steaks for the 2nd night?

Don’t do it. I used to do this but sometimes it took too long (we did stovetop frying and then placing in oven to make sure fully cooked). Last year the steaks went bad by the time we were ready to cook them. Better to have everything fully ready for second night or make something very quick like hot dogs.

Takes just a few minutes to sear it. I would do it fresh.

Thanks. It's just that I have a lot of guests so I thought that I'd prebake. Might just change my menu....

You can probably sear it for a minute or so on each side before Y"T then refrigerate.
Let sit on the counter for 1 hour before the meal and then sear again before serving.

My mother just did that first days, she sous vide them erev yt and then stuck them in the fridge still in the ziploc bags.
All they needed was a quick sear right before the meal. You can google exact temperature and timings for each cut of meat.
